Amazing dinner of Fish Head Soup Noodles yesterday. An easy no-fuss recipe prepared & served only with the huge fish head chunks but since I prefer more meat, I also use some fish fillets too for this dish. 👍👍👍

The key lies in the soup, therefore it has to be carefully prepared to bring out the best flavorful fish stock using the traditional way of making it using ikan bilis & ginger with some magic powder of Dried Halibut/Flounder or 'Chor Hou Yee' in Cantonese. Just these 3 ingredients create a deliciously clean-tasting & umami-rich soup. 😋😋😋

Simmered to create a milky-coloured soup before adding in Preserved Vege Ham Choy, tomatoes & fried fish for the sweet & sour flavour & also that amazing crunchy tanginess that gets infused in the fish stock. Lastly, for extra creaminess add in Evaporated Milk. 😀😀😀

Incredibly aromatic, gently simmered until rich savouriness perfumes the fish stock. Not only that, but it’s filled with melt-in-your-mouth bites of the most tender fish. Flavourful, delicious & full of umami-ness, this is a truly delicious noodle soup I cannot live without & also the one dish that’s bound to make everyone feel at home! 😘😘😘
